Let’s be clear, we aren’t looking for just any breakfast burrito—we want a top-notch recipe that can be perfected and served thousands of times a day. We're after a creation that's flavorful, portable, and embodies the simplicity of Denver’s best burritos. While we’re open to creative twists, there are a few guidelines to ensure each burrito fits the bill. Here’s what we’re looking for in your masterpiece:
Size & Form
Must be handheld; nothing so big you have to take a nap after you eat it. Use a thin tortilla. Designed to be unwrapped in stages, using foil for structure.
Ingredients (Required)
Homemade Pork Green Chili, Eggs, Sharp Cheddar Cheese, Potatoes, and your choice of Bacon, Chorizo, or Ham.
Flavor Inspiration
Should capture the essence of Denver staples like Santiago’s or Illegal Pete's. Keep it simple yet flavorful.
What to Avoid
No french fries, avocado, beans, rice, or other strange doo-dads. No gourmet or overly decadent ingredients. These burritos are meant to be quick, easy, and economical.
General Guidelines
Focus on creating a burrito that can be made consistently and efficiently. Aim for fresh, ethically sourced ingredients while maintaining affordability.
